Short-cycle higher education in Health food 4.0: higher technician expert in healthy cuisine – ITS Albatros

The higher technician expert in healthy cuisine:

– will be able to design and create recipes and menus for various culinary specialties, respecting the typicality of local products and lifestyles, paying attention to food intolerances, allergies and the prevention of diseases;

guarantees processing standards in full compliance with consumer’s health, understood as a correct diet, aimed at choosing foods with curative and preventive characteristics, using innovative technologies for processing, handling and conservation of agri-food products, in order to also enhance their specificity;

– will be able to know and apply control systems on raw materials, apply production processes aimed at improving quality, formulate proposals for products/services, interpreting needs and promoting consumer loyalty; prepare menus with reference to the organoleptic and nutraceutical characteristics of the raw materials and the typicality of the product. He/she takes care of the preparation of recipes and menus, with the application of innovative techniques in the context of controlled nutritional regimes; works in compliance with health regulations with particular reference to HACCP regulations; promote and manage production processes according to the principles of eco-compatibility, sustainability and in compliance with the specializations and peculiarities of the “Made in Italy”.

New models of Blockchain application will be explored and tested: the “Food Chain”, synonymous with transparency and accessibility, capable of re-generating a new value of food and a new concept of “Consumer-Actor”; “Food Safety”, new tools at the service of the supply chain, able to guarantee the best food traceability so as to ensure new levels of food safety, a valid support for the protection of the “Made in Italy”.
